Ingredients

    1 tbsp canola oil
    1 tbsp honey
    1 large clove garlic, minced
    1 1/4 tsp chili powder, divided
    1/2 tsp sea salt
    8 large strawberries, hulled and diced
    1 medium white onion, diced (about 1/3 cup)
    1 tbsp finely chopped fresh cilantro
    4 boneless, skinless chicken breast halves (about 4 oz each)
    Juice of 1 1/2 limes (about 3 tablespoons), divided
    1/2 avocado (preferably Haas), pitted, peeled and diced


Directions

In a medium bowl, whisk together 2 tbsp lime juice, oil, honey, garlic, 1 tsp chili powder and salt. Pour into large resealable plastic storage bag.

Add chicken breasts; seal and toss well to coat. Chill 4 hours, or overnight, turning bag occasionally.

Heat grill to medium-high for direct heat (or use George Foreman). Grill chicken until cooked through. Transfer to clean platter; let stand at least 5 minutes before slicing.

Meanwhile, prepare salsa. In a small bowl, toss together strawberries, avocado, onion, cilantro and remaining lime juice and chili powder. Season with salt and freshly ground black pepper. Serve with chicken.

    I love this dish! Found the recipe in a Fitness magazine years ago -- my boyfriend & I make it all the time! We use grapeseed oil instead of canola & tenders instead of breasts (cheaper & cook faster). Also try adding 1/4 mango, diced, to salsa. - 2/27/11
