Ingredients

Roasting Chicken
Garlic
3 red potatoes
3 medium peeled carrots
1/2 butternut squash into thick slices
1 scallion/sliced
Directions
Take your chicken and place on a roasting pan
Crush up some garlic (about 4)
Cut a lemon in half (this isn't on the list because I could find it!) Place one half of your lemon inside the chicken
surround the chicken with your veggies, all cut up to your liking. Season well and add oilve oil. Foil over and place in preheated oven for about 45 minutes. Remove foil and cook uncovered for the rest of the cooking time or until golden brown. (Temp: 190 C)
