Introduction
Make nutty, crunchy granola to have over yogurt or in the morning with milk in place of boxed cereal. Adjust the amount of brown sugar to water (a 3 to 1 ratio) in order to suit your tastes, and use your favorite type of nut or omit them altogether. Ingredients

8 cups old-fashioned or quick-cooking oats
1/2 cup chopped pecans
1/2 cup packed brown sugar
2 Tbsp plus 1 tsp water
1/4 tsp salt
1 tsp maple extract
1 tsp vanilla extract
Fresh or dried fruit, optional
Yogurt or milk, optional
Directions
Combine the oats and pecans in a large bowl. In a small saucepan, stir together the brown sugar, water, and salt. Cook over medium heat until sugar is dissolved, 3-4 minutes. Remove from heat and stir in extracts. Pour over oats and stir to coat. Transfer to two greased 15x10 baking sheets. Bake at 350 10-15 minutes or until golden brown, stirring every five minutes. Transfer pans to wire racks and cool completely. Store in an airtight container.
