Ingredients

    2 skinless chicken breasts about 4 ounces ea
    1/4 cup bread crumbs
    salt and pepper to taste
    1/4 cup Frank's Red Hot Sauce
    1 Tbsp butter
    1 Tbsp vinegar
    2 Whole grain hamburger buns
    lettuce and tomato

Directions

Preheat your oven to 450 degrees. Mix salt and pepper with the bread crumbs. Place the chicken breasts between two sheets of plastic wrap and flatten them to an even thickness using a heavy skillet or rolling pin. Salt and pepper the chicken breasts. Coat the chicken with bread crumbs. Place them in a baking dish coated with cooking spray and lightly spray the top of the chicken. Bake for 25-30 minutes until done and no longer pink inside. Place hot sauce, butter, and vinegar in a plastic bag. Place the cooked chicken in the bag and shake to coat. Serve the chicken on toasted whole wheat buns with lettuce and tomatoes. Dress with low fat ranch or bleu cheese dressing but be sure to add in the extra calories and fat.

    Absolutely amazing! This is the best buffalo chicken I've ever had! I followed the recipe to make dinner for my mom and I, but we turned it into salad instead of sandwiches. I'll be trying the sandwich soon though! - 10/27/10

    My husband has been asking me to make buffalo chicken for over a year. I AM NOT A GOOD COOK! I decided to try and make this. It turned out perfect! He LOVES it!! I have made it for him several times in the past month! BTW he isn't on a low cal. diet. Thats just how good it is. Thank you! - 7/10/13

    I don't understand how each breast is 4oz, but then when you check the individual calories, it gives the 51 calories for a mere 1.5 oz portion. This is not as low calorie as advertised. Add at least another 70 calories just for the chicken. - 3/26/13
