Ingredients

1 C all purpose flour
3 tbsp unsweetened cocoa
2 tbsp nonfat dry milk
1/4 tsp baking powder
1/4 tsp salt
2 ripe bananas
2/3 C light brown sugar
2 egg whites
2/3 C plain lowfat yogurt
seeds from 2 cardamom pods (crushed)
shredded coconut, toasted, to sprinkle
Directions
Preheat the oven to 350F. Grease a 9 inch square cake pan.
Sift the flour, unsweetened cocoa, dry milk, baking powder and salt into a large bowl and make a well in the center.
Mash the bananas and beat with the sugar, egg whites, yogurt, and cardamom. Stir into the dry ingredients, mixing evenly.
Spoon into the prepared pan and bake for 25-30 minutes, or until just firm. Sprinkle with coconut, let cool in the pan and cut into squares when cold.
Makes 16 servings (cut into quarters in each direction).
