It adds moistness that is a wonderful balance to the chocolate punch of the dark cocoa powder and 2 types of chocolate chips. So moist and full of chocolatey goodness. Ingredients

½ cup butter substitute (I used I Can’t Believe It’s Not Butter Original Soft Spread)
½ cup unsweetened apple sauce
1 ¼ cup splenda or other sugar substitute
½ cup egg substitute
1 tsp vanilla extract
½ cup nonfat milk
2 ½ cup flour
4 tbsp cocoa (I used Hershey’s special dark)
½ tsp baking powder
1 tsp baking soda
½ tsp cinnamon
½ tsp cloves ground
2+ cups of finely diced or shredded zucchini (I used 2.5)
120 grams Guittard milk chocolate chips (oversized)
100 grams semi sweet chocolate chips
Directions
Cream butter, sugar and oil together,
Then add vanilla, eggs
Mix all dry ingredients and add alternately with the milk.
Beat well, stir in zucchini & semi-sweet chocolate chips
Spoon into 9x13 cake pan that is greased or sprayed
Top with oversized milk chocolate chips
Bake at 325 for 40 to 50 minutes. Test for doneness with toothpick
Makes 24 approx by 2.125" x 2.25" pieces. A great satisfying portion at a reasonable calorie count for this much chocolate. Yum!
By the way, you could definitely get away with less sugar substitute than what this calls for. But as prepared, its a wonderfully sweet treat. Give it a try!
