Introduction

PLEASE NOTE: This dish marinates the fish in lemon/lime juice mixture and must be refrigerated overnight.
Recipe can be varied depending on your preference of fruit. Also, the shredded Jicama adds a great source of fiber without taking away from the taste! I love to add it to meals wherever possible!
One Tip: before slicing open your lemons/limes... heat them for 30-40 seconds in the microwave. Then, slice in half and squeeze out the juice. Warming them increases the juice yield, and makes them softer (easier) to squeeze!

Ingredients

    8 oz. (1/2 LB) Scallops, raw
    8 oz. (1/2 LB) cocktail Shrimp, raw
    1 cup fresh squeezed Lemon Juice
    1 cup - fresh squeezed Lime Juice

    3 Tbsp Cilantro, raw
    .25 cup diced Jalapeno Peppers
    2 cups - chopped/diced Red Ripe Tomatoes
    .5 cup - chopped white Onions
    2 cloves minced Garlic
    1 cup shredded - Yambean (Jicama)

    .5 cup - sliced - Strawberries
    .5 cup - sliced - Kiwi Fruit
    .5 cup - sliced Mango

Directions

In a large bowl or gallon ziploc bag, add Scallops, Shrimp, Lemon and Lime Juice. Let this mixture sit in the refrigerator for a couple hours. This "cooks" your fish, so it's important to let the mixture sit overnight when the other ingredients are added.
After the fish and lemon/lime juice have marinated together for a couple hours (or longer), add all other ingredients EXCEPT fruit. Add the fresh fruit sprinkled on top before serving.
