Introduction

My first attempt at making my own Lara-type bars. I only had sweetened cherries on hand... so I used those and did not use any dates. Most Larabars have dates for sweetness. Mine tunred out very sweet, so next time I will use 1/2 dates and 1/2 unsweet cherries. Still, these were a great "sweet-tooth" treat! My first attempt at making my own Lara-type bars. Ingredients

    1/2 cup dried sweetend cherries OR 1/4 cup whole, pitted dates and 1/4 cup dried unsweet cherries (see note above)
    1/3 cup whole, raw almonds

    Note- you can use roasted almonds if you prefer, or soak your raw almonds first. Whatever you want is fine. You can also use any kind of nut you want. You just need a little more fruit than nut.

Directions

Set aside two pieces of plastic cling wrap.
Put almonds in food processor and pulse until chopped fine. You want some bitsof nuts, so stop before you have almond flour. Pour into mixing bowl.
Add cherries to food processor and pulse until you get a paste. Depending on your processor you might need to stop and scrape the bits back into the middle, but you will get a paste eventually.
Add cherries to almonds and squish with your hands until well mixed and a ball forms. ( a friend of mine just puts everything back into the food processor and mixes it that way, but I find using my hands is easier.)
Divide ball in half and form into bar shape. Fold each in plastic wrap and flatten to desired length and thickness. Wrap tightly with plastic wrap and store in fride until ready to snack. Makes 2 bars, about 2.25 ounces each.
