Introduction

Easy-to-make, good for you cookies. These low calorie cookies are made from jell-o pudding mix, and contain no butter, oil, or eggs so they are also very low in fat. Ingredients

    1 cup unsweetened applesauce

    1/2 cup firmly packed brown sugar

    1 pkg. (4-serving size) JELL-O fat free sugar free instant pudding mix

    1/2 medium banana, mashed

    2 cups unbleached all purpose flour

    1 tsp. baking soda

    1/4 pkg. peanut butter baking chips (more or less to personal preference) *

    *--Can be substituted with anything you like: chocolate chips, raisins, nuts, etc.

Directions

PREHEAT oven to 350°F. Stir applesauce and brown sugar in large bowl until well mixed. Add dry pudding mix; stir together until blended. Add mashed banana; mix well. Gradually add flour and baking soda, beating until well blended after each addition. Stir in peanut butter chips. The mixture will be thick and sticky.

DROP tablespoons of dough, 2 inches apart, onto ungreased baking sheets. Mixture will be too sticky to roll into balls; instead, drop dough with spoon and shape loosely with fingers.

BAKE 7- 8 minutes or until cookies are just firm. Cool 1 minute; remove from baking sheets. Cool completely on wire racks.

    Very Good
    I loved this recipe! I used Spelt flour, and I did put in a pinch of sea salt. The taste is incredible! The only reason I didn't give it an "incredible" rating is that they have a very "cakelike" texture-that could very well be from the changes I made.Overall-Really, Really Good! - 10/27/10
