Ingredients

1/2 cup old fashioned oats
1 cup flour (white or whole wheat)
1 1/2 tsp baking powder
1/2 cup packed brown sugar
1 1/4 cups skim milk
1/2 cup fat free yogurt (any flavor-I used vanilla)
1/4 tsp salt
Directions
First toast the oats in a skillet over medium heat until light brown, stirring occasionally. Allow to cool.
Mix toasted oats, flour, baking powder, brown sugar, and 1/4 tsp salt into a large bowl. In a separate bowl, mix the milk and yogurt. Stir the milk mixture into the oat mixture with a spoon. Mix well. The batter will be lumpy.
Spray a skillet with cooking spray and heat on medium. Drop 1/4 cup batter into round shape. Cook about 2 minutes on each side or until brown.
Serves 4-6 with 2 pancakes each.
Try topping with strawberries and bananas. Yum!
