Ingredients

    12 oz cooked drained egg noodles
    6 cups fresh cut up peeled tomatoes (can use canned but it will not have that fresh taste)
    16 oz turkey meatballs
    1/2 cup diced green peppers
    12 oz sliced mushrooms
    1 medium diced onion
    3 cloves garlic, minced
    1/4 cup chopped fresh basil, or 1 teaspoon dry
    1 teaspoon italian seasoning, optional
    dash salt, to taste
    dash pepper, to taste
    Parmesan cheese, if desired, extra calories


Directions

Cook and drain noodles, set aside.

Use juice from tomatoes and simmer meatballs, onion, green pepper, italian seasoning, basil if using dried, garlic, salt and pepper for 10 minutes. Then add mushrooms, tomatoes and fresh basil. Simmer for 5 to 10 minutes. Pour tomato mixture over drained noodles and mix. Serve with grated parmesan cheese if desired.

    This recipe sounds too good to be true... I can't find any egg noodles that have so few carbs as your recipe shows. American Beauty egg noodles has 40g of carbs for 2 oz. dry, so 12 oz. dry would be 240g... Divided by 8 servings = 30g of carbs just for the pasta, never mind the other ingredients. - 1/17/12
