Ingredients

Cookie:
2 c. Bisquick
2 eggs
2/3 c. packed light brown sugar
5 T. Peter Pan peanut butter
1 T. vanilla extract
Filling:
1/3 c. whole milk
1/3 c. dark corn syrup
1/2 c. packed light brown sugar
2/3 c. peanut butter
1 c. powdered sugar
Directions
Beat well all of the cookie ingredients together. Shape dough into 1/2" balls. Place 2 inches apart on a lightly greased baking sheet. Flatten each cookie a little bit with the bottom of a glass which is greased and dipped into sugar. Bake 365° about 4 minutes or until set. Transfer to paper towels. When cool and crisp fill between two cookies.
Cookie Filling:
In small saucepan bring to a boil milk, dark corn syrup and brown sugar. Reduce to a simmer and cook, stirring constantly, for 5 minutes. Remove from heat and stir in peanut butter and powdered sugar; beat a few minutes on high speed. Divide and spread filling among 1/2 the cookies on the flat side...as the others will be the top of the cookie. Press together gently to let filling come right to edges of the cookies. Makes 3 dozen.
