Introduction
A traditional Greek dish with grean beans and potatoes, which is easy, tasty, cheap and healthy! It is stewed in tomatoes to give it a rich flavor!(I originally found this recipe at http://kopiaste.org/2010/06/fassolakia-yia

Number of Servings: 6
Ingredients

Snow Peas, 6 cups
1/4 C Olive Oil
Onion, 1 large, finely chopped
Garlic, 3 cloves, minced
Potatoes, 4 medium, cut into 4 or 6 pieces each
Can Diced Tomatoes, 440g or ~15 ounces
Tomato Paste, 2 Tbsp
Water, 1-2 Cups
Knorrs Vegetable Boullion Cube, 2
Brown Sugar .5 tsp
Oregano, dried 1 tsp
Dill Weed, dried, 2 tsp
Parsley, dired, 1 tsp
Salt
Pepper
Directions
1.) Wash beans and leave them in a colander to strain.
2.) Heat the olive oil in a saucepan and sauté the onion and garlic until translucent.
3.) Add the beans and the potatoes and mix for 3 – 5 minutes. Season with salt and pepper and oregano.
4.) Add the diced tomatoes, tomato paste, brown sugar and Knorrs as well as some water to cover mixture.
5.) Bring to boil, cover with lid, lower heat and simmer for about 45-1hr, until potatoes are soft and water has evaporated, leaving a nice sauce.
6.) Ten minutes before the end mix in the parsley and dill.
