Introduction

Adapted from 'Braised Savoy Cabbage Rolls Recipe' in Relish magazine. The rolls were wonderful: dear hubby said I could make them every day... but they were too time-consuming and fussy. We had extra fillings so added more and made a meatloaf that friends rave about to this day. The madeira-braised onions really makes this a standout for flavor, and a company-quality recipe. Ingredients

    * 3/4 C - 1 C cooked Quinoa (start with .25 dry quinoa and cook to package directions).
    * 3 medium cabbage leaves, steamed and minced.
    * 1 TB olive oil
    * 1 small onion, chopped small
    * 4 oz (1/2 C) Madeira Wine, divided
    * 1 tsp garlic, minced
    * 1 TB fresh sage, minced
    * 1/2 C grated carrot
    * 1/4 C chopped fresh parsley
    * 2 large eggs, whites only
    * 24 oz. ground turkey (1.5 lbs).
    * 1 tsp ground pepper
    * dash of salt (optional)
    * 1 C low sodium chicken broth
    * 1/4 C whole grain flour


Directions

Preheat oven to 350 degrees.
1. Cook quinoa as per package directions and set aside.
2. Steam the cabbage until 'al dente' firm but cooked. Let cool. Mince, and set aside.
3. Heat olive oil in skillet and add onions. Let unions saute on medium heat until translucent, starting to turn golden. Add 1/4 C of the Madeira wine (half of the recipe amount) and continue to stir and cook the onion to absorb the liquid. Pull off heat and place into a large bowl.
4. Add in the bowl all other ingredients except the remaining wine, the broth, and flour. You'll use these to make a simple grav\y afterwards.
5. Mix the turkey, egg whites, cabbage, carrot, onion, quinoa, garlic, parsley, sage, pepper, and salt well, like you would any meatloaf.
6. Pat into a loaf pan and cover with foil. Cook in oven for about 40 minutes.
7. Remove foil, drain off as needed and cook 5-10 more minutes.

Optional simple gravy:
7. Combine the remaining 1/4 C madeira wine, and broth, in a small saucepan and heat.
8. When hot, add the flour and whisk wel to avoid lumps. When smooth and thickened, remove from heat. Serve a spoonful over the sliced serving of meatloaf.
Optional: You can also use pan drippings from the mealoaf and some added sage, salt and pepper, but that is not accounted for in the calculations.
