Introduction

40g I can't beleive it's not butter (or any low fat baking margarine)
1 tsp each grated lemon, lime and orange zest
60 g xylitol
1 small egg
120 g self-raising flour, sifted
60 ml soy milk
1 tsp poppy seeds

Ingredients

Directions

Beat together margarine, citrus zest, xylitol, egg, flour and soy milk until all ingredients are combined and begin to turn pale. Then stir in the poppy seeds.

Line the cupcake holes with cake cases and spoon the mixture equally between them. Bake for 8 to 10 minutes. When the muffins are ready, turn them out onto a wire rack to cool.

Opt: Glaze the cooled muffins with smooth marmalade and decorate with citrus zest.
