Ingredients

    * Catelli Smart Pasta (Fettuccine), 85g
    * Chicken Thigh, bone and skin removed, 3 units
    * *Kraft Smooth Light Peanut Butter, 2 tbsp
    * *Crisco Pure Vegetable Oil, 1 tbsp
    * Lemon juice, 2 tbsp
    * *Soy Sauce, 1 tbsp
    * Edamame, Shelled, Frozen, 0.5 cup
    * Celery, raw, 1 stalk, chopoped
    * Onions, raw, 1 cup, sliced
    *Garlic, 3 cloves, chopped
    * Red Ripe Tomatoes, 0.5 medium, chopped
    * Red Chili flakes

Directions

Bake chicken in the oven at 400degrees until cooked
Cook noodles(85g) as per direction.

In a sause pan, saute onions in oil until golden
Add garlic, red chilli flakes, lemon juice, peanut butter and mix well.
Add chopped tomatoes, edamame and chopped celery
Stir in chicken and cooked noodles.

Garnish with peanuts or chopped coriander leaves

(Can switch chicken for more vegetables for a vegetarian option)
