Ingredients

    Pecans, 2 cup, chopped
    Cocoa, dry powder, unsweetened, .33 cup
    Baking Powder, 1 tsp
    Salt, .25 tsp
    Egg, fresh, 4 large
    Butter, unsalted, .5 cup , softened
    Vanilla Extract, 1 tsp
    *Sweet 'n Low Liquid Sweetener, 6 tsp=2TBS=for 1 cup subs. sugar
    *Erythritol 1/4 Cup, 1 serving (powdered) (optional)
    Water, tap, .5 cup

Directions

Heat oven to 350 F. Grease a 8 or 9" round pan or springform pan.

1) Process pecans in food processor - pulse until they are meal - but they won't get quite as small as corn meal.

2) Pour into large bowl. Add the rest of the dry ingredients to bowl and stir. (Note on erythritol: You can do this recipe with all artificial sweetener, but using partial erythritol helps it be sweeter, without as much artifical sugar aftertaste.

3) Add the remaining ingredients and blend with mixer on low until blended, then on high for 2 minutes until well-blended.

4) Pour into pan and bake. The exact time will vary with the pan. Start checking at about 25 minutes until toothpick inserted in center comes out clean.

5) Cut when cool. If desired, serve with homemade whipped cream (or Reddi Whip real whipped cream) and/or sugar free chocolate sauce.

    I used coconut flour cause we are on 4HB. Found this online and was glad to see you had saved me the trouble of entering on here! The only thing is that you want your butter melted (not softened) for additional liquids. - 3/22/11
