Ingredients

    4 tbsp olive oil
    2 medium yellow onions, diced
    6 cloves garlic, minced
    4 (15 oz) cans fat free reduced sodium chicken broth
    1-1/2 pounds leftover diced chicken (dark and white meat)
    1 (15 oz) can reduced sodium small white beans
    1 large bunch broccoli raab, chopped, tough stems removed (approx 6 cups)
    freshly ground black pepper to taste

Directions

Makes 6 servings (approx 2 cups per serving).

Saute onion in olive oil over lowish heat until translucent. Add garlic and saute for a minute or so, stirring frequently. Turn up the heat to medium and add chicken broth, diced chicken, and white beans, stir in to combine. While the broth is heating, start adding the broccoli raab a bit at a time. When the broccoli raab has all been added, stir in black pepper to taste. Simmer covered for around 20 minutes, until the broccoli raab is tender but not mushy.
