Low fat chili made with ground chicken Low fat chili made with ground chicken
Number of Servings: 12

Ingredients

    1 lb ground chicken
    1 can tomato soup (10.75 oz)
    1 can diced tomatoes
    2 celery stalks, chopped
    1 large onion, chopped
    6 garlic cloves, minced
    1 can sliced mushrooms
    1 red or green pepper, diced
    1 can red kidney beans, drained (3 servings)
    6 tbsp chili powder (season to taste)
    salt (season to taste)
    pepper (optional)

Directions

Brown ground chicken in skillet and drain.
Add chicken and all other ingredients to the slow cooker. Cook on high for 6+ hours.
Enjoy!

    This was good. Do NOT use 6 tbsp on Chili Powder...lol! I learned the hard way! But all in all, it was great! I prefer lean beef to chicken, just a texture thing for me, but a great recipe! :) PS. At first, it looks like there is not enough liquid. There is! Don't add more = soup! KUDOS! - 1/14/08

    Incredible!
    Yum! I adapted this a bit by using a combination of white beans and black beans.....and added some green salsa.......but when I was done, it was the best chili I've ever made! Thanks. - 12/31/07
