Number of Servings: 6

Ingredients

    2-3 lbs. boneless skinless chicken breasts
    2 tbsp (or 1 pkg) dry ranch dressing mix
    4 tbsp melted light margarine (separated)
    1 small onion, diced
    1 garlic clove, minced
    1c mushrooms, sliced or chopped
    1 10 oz can 98% fat free cream of chicken soup
    4 oz reduced fat cream cheese
    1/2 c chicken broth

Directions

Makes 6 Servings.

1. Place chicken in crock pot. (I like to pound mine thin and always make sure they touch the bowl for even heat.)

2. Sprinkle with 2 tbsp melted light margarine & 3 tbsp or 1 pkg of dry ranch dressing mix.

3. Cook on low for 4-6 hours.

4. In a small sauce pan, melt the remaining margarine (2 tbsp) and saute onion, mushrooms and garlic for about 3-5 minutes. Add soup, broth and cream cheese. Stir until cream cheese is melted.

5. Add mixture to crock pot and cook on low for one hour.

Serve over brown rice, no-yolk egg noodles or just with a side of steamed veggies.
