    8 boneless skinless chicken breast
    1/2 c. flour
    2 TBSP olive oil
    2 medium onions, chopped
    2 medium bell peppers, chopped
    1 clove garlic, minced
    2 tsp. curry powder
    1/2 tsp pepper
    2 cans diced tomatoes
    1 tsp chopped parsley
    1/2 tsp thyme
    2 TBSP raisins
    1 cup water


1. Dust chicken with flour.
2. Brown in olive oil.
3. Add curry powder, black pepper, mix well.
4. Add remaining ingredients except for raisins.
5. Cook covered on top of stove or in oven until
done. About 45 minutes.
6. Add raisins.
7. Serve over rice.

  • spicy but the raisins add a very nice sweetness. I didn't have tomatoes so it was more yellow curry. I would add more raisins next time. - 2/3/10
