Ingredients

* 1 box (300g) Catelli Healthy Harvest Whole Wheat Bows (bowtie) Pasta [or 300g of any similar shape!], cooked 'al dente'
* 295g Chicken breast, boneless and skinless, cubed [About 3 average breast halves, +/-.]
* 2 tbsp. Olive Oil, divided
* 6 cloves Garlic, crushed
* 220g Red onion, chopped [About 1 medium onion, +/-.]
* 330g Mushrooms, white, sliced [About 16 medium-sized mushrooms, +/-.]
* 225g Broccoli florets [About 1 'bunch' of broccoli, trimmed to only use the florets, +/-.]
* 1 (435ml) jar Classico Alfredo & Roasted Garlic Pasta Sauce
* 1/4 cup Half and Half Cream
* 1/4 cup Milk, 1%
* 4 tbsp. Parmesan Cheese, grated
* Freshly ground Sea Salt and Black Pepper, to taste (((NOT included in tracker nutritional information!)))
Directions
1. Boil the pasta per package instructions in a pot of salted water.
2. While the pasta cooks, heat 1 tbsp. of the olive oil, salt and pepper (to taste) in a *LARGE* skillet or wok (I prefer the wok!). Add the cubed chicken breast, and cook through. Remove from the skillet and reserve.
3. Heat another 1 tbsp. of olive oil, salt and pepper (to taste) in the same skillet over medium-high heat. Add the garlic, onions, and mushrooms, and sautee for a few minutes, or until the garlic and onions start to caramelize a bit.
4. Next add the Broccoli. Sautee for a few minutes more.
5. When the vegetables are crisp-tender, lower the heat a bit and add the jar of alfredo sauce, half and half cream, milk, and parmesan cheese. Stir and heat through, adding the reserved chicken once the sauce and dairy is well incorporated.
6. Drain your pasta when it is 'al dente' (still a bit firm), and add to the wok. Stir and heat through.
7. (OPTIONAL, and NOT IN TRACKER!!!) Serve with more freshly grated parmesan on top!
8. Makes 9 cups. I'd eat 1 - 2 cups (1 - 2 'servings') in a meal, depending on if it's lunch or dinner. Enjoy! :)
