Introduction

I had this with a 100 calorie english muffin, if I had made a little smaller, 2 egg whites a little less asparagus, it would have made a nice breakfast sandwich. Ingredients

    3 egg whites
    .50 oz cheddar grated
    2 tablespoons non-fat milk
    .50 asparagus (pre-cooked, great way to use leftovers)
    dash of milk, approx 3 tablespoons
    pepper to taste
    dash of mustard powder

Directions

spray a small frying pan with cooking spray
beat eggs with milk, pepper & mustard powder
cook as you would for an omlette
add cheddar and asparagus to mixture.
Serve w/english muffin or bread of your choice
