    1 can (12 oz) skim/fat-free Evaporated Milk
    1 can (15 oz) Canned Pumpkin
    3/4 c sugar
    1/2 t salt
    1 t ground cinnamon
    1/2 t ground ginger
    1/2 t ground cloves
    2 large eggs


makes 8 - 1/2 cup servings

Preheat Oven to 425 (F)

1. Beat eggs in a bowl
2. Stir in sugar, salt, cinnamon, cloves and ginger
3. Add pumpkin
4. slowly mix in evaporated milk.
5. pour servings into ramekins (either 1/2 cup for individual or 1 cup for 2 servings)
6. cook in 425 deg. oven for 15 minutes
7. lower oven temperature to 350 deg. and cook for another 20-30 min, or until a knife inserted into the center comes out clean.
8. place on wire racks and let cool.
