Introduction

Ingredients

    10 cups of water
    2 cans plain pumpkin (Trader Joe's organic)
    1 12oz. pkg Mori Nu firm silken tofu (The smooth silken kind works best for pureeing.)
    1/2-1 onion, chopped
    1/2 c chopped celery (I chop the ends, small bits, and leaves left from the heart and freeze them for soups.)
    2 bouillion cubes w/herbs (Rapunzel)
    2 bouillion cubes no salt added (Rapunzel)
    1.5 tbsp curry powder (mild), or to taste

    Stir well and cook until onions are clear. Use immersion blender to puree soup. Serve!

Makes 8 2-cup servings.
