Ingredients

3/4 c cornmeal
1 tsp sugar
1 tsp salt
1/4 tsp fresh ground pepper
2 1/2 c 1% milk
1/4 tsp hot sauce
2 egg yolks
1 tbsp butter
1/2 tsp baking powder
3 egg whites
Directions
Pre heat oven to 350.
Combine first 4 ingredients in a large sauce pan.
add milk and hot sauce. cook over medium heat until thick, about 15 minutes, stirring constantly.
place egg yolks into medium bowl. Spoon in 1/2 c of cornmeal mixture. stir then combine with remaining cornmeal mixture. put baking powder and egg whites in mixing bowl. beat at high speed until stiff peaks form. Fold gradually into cornmeal mixture. Pour into 11X7 pan sprayed with cooking spray. Bake for 40 minutes. Makes 8 servings.
