Ingredients

    2 skinless chicken breasts
    1/4 cup spicy Szechuan sauce
    1/4 cup water
    1 tbsp honey
    1 tbsp olive oil
    Corn starch for dusting chicken
    1 1/2 cup snap peas - or vegetable(s) of choice
    1 cup rice
    Grated zest from one (sm) orange

Directions

Cut chicken into bite size pieces & dust with corn starch.
Pre-heat saute' pan, add oil and chicken when hot.
Cook chicken for 5-7 min.
Add Szechuan sauce, water, honey and orange zest, simmer 3-5 min.
Add vegetables and saute' together.
Serve over 1/2 cup of rice.

    Beware! This is really spicy as submitted. I love REALLY spicy food and it was too hot for me. It is an AMAZING recipe though and SUPER EASY. I will be making this one regularly, especially during busy season at work when I have little time, but will be toning down the heat :-) Thanks! - 1/23/11

    I opted to use sweet chili sauce and chicken quarters. For veggies, I just used onions and bell peppers. This is wonderful! - 6/15/10
