Ingredients

    2 c. diced cooked ham
    1/2 c. chopped green onion
    10 8-in. flour tortillas
    2 c. shredded cheddar cheese, divided
    6 large eggs
    2 c. half and half
    1/2 tsp. salt
    1/4 tsp. ground red pepper

Directions

Sprinkle cooked ham and chopped green onions evenly down the center of each tortilla. Top each with 2 tbsp. shredded cheese. Roll tortillas and place, seam down, in a lightly greased 13x9-in baking dish.

Whist together eggs, half and half, salt and red pepper in a large bowl. Pour mixture evenly over the tortillas.

Cover and chill at least 8 hours. Remove from refrigerator and let stand at room temperature for 30 minutes before baking.

Bake, covered, at 350 for 20 minutes; uncover and bake 15 minutes. Sprinke with remaining 3/4 c. cheddar cheese and bake 3-4 minutes or until cheese melts. Let stand 10 minutes before serving.
