Introduction

Just made this one up for dinner tonight. Turned out great and was a very large serving -- if you're not REALLY hungry I suggest making this into 4 servings. I served it with a toasted multi grain english muffin drizzled with olive oil & sprinkled with garlic powder. And unsweetened applesauce with cinnamon. YUM! Just made this one up for dinner tonight. Ingredients

    4 oz Barilla Plus Thin Spaghetti
    1/2 of a Boneless Skinless Chicken Breast
    2 cups chopped Fresh Baby Spinach
    1 cup thinly sliced Onion
    2 tsp. minced Garlic
    1 Tbsp Extra Virgin Olive Oil
    1 tsp dried Basil
    2 oz finely shredded Cabot 75% Light Vermont Cheddar

Directions

Prepare spaghetti according to package dirrections. Drain & set aside. Slice chicken lengthwise to form 2 thin cutlets. In small skillet, heat olive oil. Add onion and saute until begining to brown. Add chicken & continue to cook until chicken is done. Remove chicken from pan. Add garlic, basil, spinach and prepared spaghetti and toss gently. Put half of pasta on each plate, top with chicken & sprinkle with cheese.
