Introduction

I made this, wanting something for breakfast that would be filling and tasty. I'm just starting on the road to losing weight and don't always by different foods for me than for my family. This would probably be lower in calories if Egg Beaters were used. I made this, wanting something for breakfast that would be filling and tasty. Ingredients

    3 large eggs, scrambled
    1/4 cup packed fresh baby spinach
    1 tbsp feta cheese
    salt and pepper to taste

Directions

Heat non-stick skillet.

Scramble 3 eggs in bowl, pour into heated skillet. Add baby spinach. When the eggs are just about done, add feta cheese. When the eggs are cooked, remove and add salt/pepper to taste.
