Introduction

Ingredients

    Fajita spice mix:

    Chili powder, 1 tbsp
    Salt, 1 tsp
    Paprika, 0.5 tbsp
    Granulated Sugar, 1 tsp
    *Onion powder, 1 tsp
    *Cayenne Pepper, ground, 0.25 tbsp
    *1/2 tsp. Cumin Powder, 1 serving

    Fajita filling:

    Spray Oil (Around 5 sprays should do it)
    Turkey (light meat), 250 grams, chunks
    Yellow Peppers (bell peppers), 1 pepper cut into strips
    Green Beans, 200 grams, topped and tailed
    Onions, raw, 1 medium, cut into wedges
    Yogurt, plain, low fat, 1 pot (use as garnish like you would sour cream)
    Whole Wheat Tortilla, 6 serving (would probably stretch to more, but I like to cut down on the carbs!)

Directions

Makes 6 very full tortillas

1. Mix all spice ingredients in a bowl, spray turkey with oil and rub meat in Fajita mix
3. Spray onion with oil
4. Brown off meat and onion in a wide pan or wok (I find the latter better), then add pepper slices
5. Boil green beans. When green beans are cooked add them to the fajita mix, stir well
6. Heat tortillas, fill with mix and top with yoghurt
7. Eat!
