Ingredients

    1 pound 93% lean ground turkey (can sub 1 pound spiced turkey or chicken sausage; casing removed and ground)
    2 cups leeks, washed, trimmed and sliced in 1/4 inch pieces
    1 cup carrot, peeled and chopped
    1 cup celery, peeled and chopped
    1 poblano pepper, seeded and chopped
    1 medium sweet potato; peeled and cut into bite size pieces
    2 cloves garlic, minced
    1 tsp cumin
    6-8 cups chicken broth
    1 15 oz can black beans, drained and rinsed
    1/2 cup corn
    2 cups packed fresh spinach
    2 TBS cilantro, chopped (more for garnish)

Directions

Brown ground turkey or sausage, breaking meat into bite sized pieces. Remove from pan and drain.

In now empty pot (sprayed with nonstick spray), add leeks, carrots, celery and poblano. Saute for 5 minutes until vegetables begin to soften.

Add sweet potato, garlic and cumin and saute an additional 30 seconds. Add chicken broth and ground meat and simmer until potatoes are tender, 10-15 minutes.

Add black beans, corn, spinach and cilantro and cook until spinach wilts and corn and beans are heated through, 3-5 minutes.

Season with salt and pepper and serve immediately with sprigs of fresh cilantro
