Introduction

Inspired by a pizza I had once. Serve alone, over a bed of lettuce or even on crackers. Inspired by a pizza I had once. Serve alone, over a bed of lettuce or even on crackers.
Number of Servings: 10

Ingredients

    2 avocados pitted and chopped
    1.5 cups chopped kale
    4 steamed fresh artichokes or 2 cans hearts drained and chopped
    1 package of feta cheese
    1 tomato chopped
    4-5 tablespoons Good Seasons Italian dressing made with less fat
    1/2 cup red onion
    2-3 cloves garlic
    2 cans black beans drained and rinsed
    salt and pepper to taste
    2 Tbl Lemon juice or to taste

Directions

clean and steam artichokes or drain canned hearts
chop up all other ingredients and mix with salad dressing and lemon juice.
Enjoy!
