Introduction

For those of you doing the HCG diet or Atkins, this is a nice little treat. We're always working and tweaking recipies to make them better. This is where I am so far on this one. Hope you enjoy. Ingredients

    2T Flax Seed Meal (ground flax)
    3 Pkgs Truvia Natural Sweetener
    1T Cocoa, dry powder, unsweetened
    .5t Cinnamon
    1/2 t Maca Magic Powder 1/2 t. 1.5 grams (optional)
    1T Milk, 3.25%
    2T Sour Cream
    1 large Egg, fresh


Directions

Microwave coconut oil in microwave safe mug till melted (30 seconds to 1 minute.) Combine dry ingredients in a separate bowl/cup. Add milk, sour cream and egg in mug with coconut oil. Add dry ingredients to wet ingredients. Microwave for 2-3 minutes.

    This is a delicious recipe. I top mine with low fat strawberry cream cheese. There's something about strawberry and chocolate that brings a smile to my tummy. - 7/15/11

    Other mug cake or muffin recipes I've seen call for 1 teaspoon of coconut oil - I might put in 2 and skip the sour cream when I eventually try this recipe. The flax seed meal would be included in the dry ingredients.

    Am I missing something? I don't see the amount of coconut oil to use, as it says flax seed. Is there C.O. as well? - 11/18/11
