Introduction

Pikelets are like little pancakes, common in New Zealand (and Australia).

Orgran No Egg is an egg-free subsitute, where 3g/1t of powder combined with 2T of water is the equivalent of one egg. If you are using a different brand or type, then replace the No Egg and water with the equivalent volume of your substitute.

If you want to use an egg, then I'd recommend beating the egg and the sugar before adding the dry ingredients.

Ingredients

    Orgran No Egg Natural Egg Replacer, 3g, 1 heaped tsp
    2 tbsp water
    1 cup plain flour
    3/4 cup super trim milk
    1/4 cup sugar
    1 tsp salt
    1 tsp baking powder

Directions

1. Combine No Egg with the water to make the equivalent of one egg.

2. Sift flour and baking powder and add to sugar, combine with egg replacement and milk to make a batter.

3. Heat a non-stick pan, and using a 1 tbsp measuring spoon, measure out 3 or 4 pikelets at a time. This measure should give you pikelets which are approx. 7cm in diameter. You can make them bigger or smaller as you wish.

4. When bubbles begin to form on the surface of the cooking batter, the bottoms should be becoming golden, using a slice, flip the pikelets over to cook the other side.

5. Repeat until the batter is all cooked!

6. Top with your desired topping, sweet or savoury. Nice served still warm, but great cold with jam and cream.
