Ingredients

1/2 - Tbsp Olive Oil
1 - scallion, diced
3 - cloves garlic, minced
1 - can diced tomatoes (drained)
2 - Tbsp lemon juice
2 - Tbsp chicken broth
1 - packet stevia powder (or half packet to taste)
salt
pepper
1/2 lb raw shrimp, deveined (thawed if frozen)
Directions
Heat olive oil, scallions, garilc in saute pan over medium heat. Add dash salt/pepper. Cook about 4 min, after greens wilt and before garlic browns. Add tomatoes, dash more salt and heat through. Add broth and lemon juice. Let simmer. Taste mixture, if too tart stir in half /all of stevia packet.
Salt and pepper raw shrimp. Add to pan. Cook until slightly curled (2-3 min) then flip and cook 1-2 min until done.
Serve mixture over cooked rice, pasta, or polenta.
Serving Size: Makes about 2 1-cup servings with 4 oz shrimp each
