Ingredients

2 cups cooked and cooled white jasmine rice
1 15oz can black beans, drained & rinsed
1 cup red bell pepper, chopped
1 cup zucchini, halved slices
1 bunch (1/2-3/4 cup) green onions, chopped
3 oz (6 pieces) marinated artichoke hearts, quartered or halved
1/4 cup chopped celery, include some tops
6 kalamata black olives, pitted, halved
4 TBSP italian vinaigrette salad dressing
1/8 - 1/4 tsp ground black pepper
1/2 dried thyme, crushed (or 1 tsp fresh, minced)
2 cloves garlic, minced
Directions
Makes 10 servings (approx. 3/4 cup)
In a large bowl, combine all the ingredients in the order given. Add salt, if desired.
Chill in frig for at least 1 hour.
Takes great for 3 days.
Do not add tomato until serving-makes salad soggy and off-flavor the next day.
Use this for a salad, side dish, or as the main entree. Great for packed lunch.
Cilantro is a great addition-use 1/2 bunch chopped.
