An adaptation of my mother's pepperoni rolls. These are great dipped in spaghetti sauce. An adaptation of my mother's pepperoni rolls. These are great dipped in spaghetti sauce.
Number of Servings: 16


    4-1/2 teaspoons active dry yeast
    4-2/3 cups water
    3-1/2 cups wheat flour
    3-1/2 cups white flour
    1/4 cup olive oil
    1 tablespoon salt
    1 tablespoon sugar
    1 cup mozzarella cheese
    144 slices of pepperoni


preheat oven to 350 degrees. mix yeast and warm water. Let set until yeast is dissolved (about 5 minutes). add wheat flour, salt, sugar, and olive oil and mix until well combined. Add white flour 1/2 cup at a time until dough is smooth and elastic. let rise in an oiled bowl covered with a damp towel for 1-1/2 hours our until about double. Divide dough into 16 equal portions. Roll out into an 8 inch rectangle. arrange 9 slices of pepperoni in a 3x3 square in the middle of the rectangle allowing about 1 inch around the edges. add 1 tablespoon of mozzarella cheese and roll into a log, sealing the ends. bake in a greased 9X13 pan for 20 minutes or until golden brown.
