Introduction

This is my lean version of Spanish Rice the way my Mom made it. She made it with ground beef and white rice and made her own enchilada sauce. I kicked it up with the cayenne because it is a good appetite suppressant and we like spicy foods. This is my lean version of Spanish Rice the way my Mom made it. Ingredients

    2 cups Brown rice
    6 cups water
    2 lbs lean ground turkey burger
    1 28 oz can of enchilada sauce
    1 packet of taco seasoning
    1/2 tsp cayenne pepper

Directions

Cook rice and water according to rice package. Brown turkey and add seasonings and enchilada sauce to meat. When rice is done mix with meat mixture and serve with a side dish of salad or veggies. Makes 8 generous ( approximately 2 cups) servings.
