Ingredients

1/2 c. smart balance buttery spread (room temperature)
1 c organic brown rice syrup
2 large eggs
1 t. pure vanilla extract
1 1/2 c. old fashioned oatmeal
3/4 c whole wheat pastry flour
1/2 c raisins
1 c walnuts (optioinal)
1/4 t. sea salt
1/2 t. baking powder
1 t. cinnamon
Directions
Preheat oven to 350 degrees. Line two large cookie sheets with parchment paper.
In a medium bowl or processor, whip smart balance until creamy. Add brown rice syrup, eggs, and vanilla, beating well (about 3 minutes).
In a second medium bowl, stir the oatmeal mixture into the smart balance combination until moistened. You will use two teaspoons to form dough balls. Drop dough onto baking sheets in mounds. 2 inches apart.
Bake both sheets on upper and lower racks for 12 -15 minutes until golden. After 7 minutes switch the top sheet with the bottom sheet to ensure even cooking. Let cool at least 20 minutes before peeling cookie from parchment paper.
