Introduction

Ingredients

4 slices bacon
1 bunch watercress, stems separated and finely chopped
1 small white onion, finely chopped
3 garlic cloves, smashed
4 c. stock (any variety)
1 stalk celery, cut into planks
1/4 c. heavy cream (optional)
Directions
Fry bacon till crisp in dutch oven. Remove and crumble.
In bacon fat, saute onion & garlic till fragrant and softened. Add crumbled bacon, stock, celery planks, and watercress stems. Simmer covered, about 20 minutes (make sure watercress stems are very tender before proceeding). Fish out the celery planks and discard.
Remove soup from heat and add watercress leaves and cream (temper so it doesn't curdle). Stir till all is well mixed; serve.
