This is adapted from another site's recipe to be healthier; reduced the calories per serving by about 60. Wouldn't recommend trying to lighten it further in the baking; you could omit the topping, but that'd only save about 7 calories per muffin. Ingredients

Flour, 2 cups
Baking soda, 2 tsp
Baking powder, 2 tsp
Cinnamon, 1 1/2 tsp
Ground cloves, 1/2 tsp
Salt, 1/2 tsp
Brown sugar, packed, 3/4 cup
Applesauce, unsweetened, 1 1/2 cup
Granulated Sugar, 1/3 cup
Canola (or other vegetable) oil, 1/3 cup
Large egg, 1
Vanilla extract, 2 tsp
Apple, peeled, cored, diced, 1 1/2 cups
Raisins, 1/2 cup
Topping:
Brown sugar, unpacked, 3 tbsp
Flour, 1 tbsp
Cinnamon, 1 tsp
Canola (or other) oil, 1 1/2 tsp
Directions
Combine topping ingredients in small bowl. Set aside.
Whisk together dry ingredients (flour, baking soda, baking powder, cinnamon, cloves, salt) in large bowl.
In smaller bowl, whisk together wet ingredients (brown & granulated sugar, applesauce, oil, egg, vanilla).
Combine wet with dry; sprinkle with diced apple and raisins. Stir until just combined -DO NOT OVERMIX! Spoon into 20 paper-lined muffin tins; sprinkle with topping.
Bake at 375 for about 20 minutes.
*If you want to reduce calories further, simply make the muffins smaller (i.e., make a higher number of mini-muffins). If you do this, be sure to watch the muffins carefully in the oven.
