Number of Servings: 4

Ingredients

    1 tsp sugar
    1 tsp paprika
    1/2 tsp salt
    1/2 tsp freshly ground pepper
    1/4 tsp cayenne pepper
    1 lb boneless skinless chicken tenders or breast cut into 2 in pieces
    1 tbsp canola oil
    1 package of Birds Eye (or equivalent) frozen pepper stir fry OR
    2 cups of chopped green, red and yellow bell peppers and onions.

Directions

1. Combine sugar, paprika, salt, pepper and cayenne in a medium bowl. Add chicken and toss to coat. Cover and refrigerate for 15 minutes or overnight.

2. Heat oil in a large nonstick skillet over high heat. Add pepper and onion mix and cook, stirring occasionally, until the vegetables are soft (approx. 5-7 minutes). Add the spice rubbed chicken and cook, stirring until no longer pink in the center (approx 4-5 min). Serve hot with brown rice.
