Introduction

It took many years of experimentation before my family finally pronounced this mac & cheese recipe to be "IT"! They all agree that the onion is what makes the difference, giving it the extra "kick" that the dish was missing before. Since it's so high in fat and sodium, I serve it only occasionally (much to my boys' disappointment!) and make sure to balance it with a nice, big serving of low-carb green veggies on the side. I also am careful to choose lower-fat and -sodium foods the rest of the day when this is on the menu. Ingredients

    8 oz. elbow macaroni, cooked without salt
    2 c. shredded Monterey Jack cheese
    2 c. shredded sharp cheddar cheese
    1 can (12 oz.) nonfat evaporated milk
    1-1/2 c. milk (I used 1% for the nutritional info)
    2 eggs, lightly beaten
    1 c. diced ham
    1/4 c. onion, chopped
    1/4 tsp. pepper

Tips

You can, of course, improve the nutritional profile in a number of ways. But the dish won't be nearly as satisfying, which can lead to your raiding the pantry later anyway. All things in moderation!


Directions

Spray a 3-4 quart crockpot with cooking spray. Combine cooked pasta, 3 cups of cheese, milk, eggs, ham, onion and pepper together in the crockpot; mix well. Sprinkle the remaining 1 cup of cheese over top of the pasta mixture. Cover and cook on low for 3-4 hours (cooking for closer to 4 hours will give you a bit of a crispy crust, almost as good as baked mac & cheese!).
