    3 Cups thinly sliced zucchini (peeled or unpeeled)
    1 small onion, chopped
    1 Cup Bisquick mix
    1/2 Cup Shredded Cheddar Cheese or grated Parmesan
    4 eggs ( can use egg beaters)
    2 TBSP Vegetable Oil
    1/2 tsp dried parsley
    1/2 tsp dried marjoram
    1/4 tsp salt
    1/4 tsp white pepper

    Crisco Shortening (to grease pie pan)
    1 - 2 TBSP dried breadcrumbs


Mix all ingredients together in a large bowl until zucchini is evenly coated. Pour into greased then bread crumbed 9" pie plate or 10" x 6" baking pan. Bake in preheated 350 degree oven for 45 minutes or until golden brown and baked through. You can tell it is set if a knife inserted in the center comes out "clean".
