Ingredients

1 scoop Gold Standard Vanilla Whey Protein
1 cup Almond Breeze Unsweetened Original Almond Milk
2 cups So! Delicious Unsweetened Coconut Milk*
    1/2 cup steel-cut oats
    1 tablespoon unsweetened cocoa
2 tablespoons finely shredded sweetened coconut
    1 teaspoon vanilla extract
    1/4 teaspoon almond extract

    3 tablespoons sliced almonds

*Do not substitute canned coconut milk! I found So Delicious brand coconut milk in the refrigerated health foods section of my grocery store.

Directions

Spray a 1.5-2 quart crockpot* with cooking spray. Dissolve protein powder in almond milk. Mix all ingredients except almonds together in pot. Cook on low over night (7 to 9 hours).

Stir oatmeal well. Top each serving with a tablespoon of sliced almonds and sweetener of choice.

*If you don't have a small crockpot, mix the ingredients in a heat-proof bowl that will fit into your crockpot; place the bowl in the crockpot and then fill the crockpot with water about halfway up the bowl.

Serving Size: 3 one-cup servings
