Introduction

My husband really wanted to create a "green" soup using some of the delicious kale we had in the garden. I must say that this soup was absolutely delicious. It definitely tastes green but it's also really delicious and filling. My husband really wanted to create a "green" soup using some of the delicious kale we had in the garden. I must say that this soup was absolutely delicious. It definitely tastes green but it's also really delicious and filling.

Ingredients

    1 pound of Kale
    1/4 pound spinach
    1 leek
    1 clove of garlic
    1 tbsp olive oil
    4 cups of broth (veggie, beef, whatever you like)
    1/4 cup of sherry
    1 tsp of fresh thyme
    lemon juice from half a lemon

Directions

Chop leeks and garlic, sautee in a pan that has been coated with the olive oil till browned and fragrant stirring occasionally, about 5 minutes. Deglaze pan with sherry stirring until the sherry has reduced by half.

Add Kale, spinach, broth, and thyme to the pot, cover and simmer for 15 minutes.

Transfer soup to a blender and blend to desired consistency. Add lemon juice, stir it in and serve.
