Introduction

These breakfast wraps are great to make ahead and freeze. Then when you need a healthy, energy packed breakfast to take on the go, you pop them in the microwave. I add 1 tsp of salsa to them after they are heated. These breakfast wraps are great to make ahead and freeze. Ingredients

    5 - 5in whole wheat tortilla wraps
    2.5 slice of fat free cheese slices (Black Diamond)
    5 slice turkey bacon (President's Choice)
    2 - lg eggs
    .5 cup of egg whites (Naturegg)
    .05 cup of skim milk
    .5 med. red pepper
    1 tbsp dried onion flakes

Directions

Lay out the tortilla wraps. Place half a slice of cheese and one slice of cooked turkey bacon in each one. Fry (in non-stick pan) the red peppers for a couple of minutes. Mix eggs, egg whites, skim milk and onion flakes and add red peppers. Prepare like scrambled eggs. Divide mixture into the five wraps. Roll up the wrap and place in freezer bags. I use a larger bag and then just remove them individually as needed.
To reheat from freezer, just wrap in paper towling for 1-1.5 min. Add salsa, optional.
