Introduction

Number of Servings: 32

Ingredients

    Filling:
    3 8 ounce packages of room temp. cream cheese
    4 eggs
    1 cup powdered sugar
    1 tsp vanilla
    4 oz. melted white chocolate
    1 cup chopped dried cherries
    1 cup light sour cream


    Crust:
    4 cups graham cracker crumbs
    2 sticks of melted butter


Directions

Crust -
Combine graham cracker crumbs and melted butter in a bowl - add 1 cup of sugar and stir until well mixed.
Press 1/4 cup of crust mixture into muffin cups.
Bake in a pre-heated 325 degree oven for 10 min.
Allow to cool.

Filling:
In a large mixer combine room temperature cream cheese and slightly beaten eggs. Mix until eggs are incorporated. Mix in 1 tsp. vanilla extract, 1 cup powdered sugar and 1 cup low fat wour cream. Add melted and cooled white chocolate and chopped dried cherries. Mix until well blended.

Using an icecream scoop, fill cooled crusts with cream cheese filling. Bake in 350 degree oven for 30 minutes.

Cool cheese cakes until room temperature then refrigerate until ready to serve.

Top each muffin with a teaspoon of canned cherries and then sprinkle shaved macadamia nuts on top.
