Ingredients

    For Icing:

    Powdered Sugar, 3 cup, sifted
    Shortening, .33 cup
    Milk, nonfat, .1875 cup
    Vanilla Extract, 1.5 tsp

    For Cake:

    Shortening, 0.5 cup
    granulated Sugar, 1.5 cup
    Egg, fresh, 2 large
    all purpose flour, 2.25 cup
    Baking Powder, .25 tsp
    Baking Soda, .75 tsp
    *Lemon Juice, 1 tsp
    Milk, nonfat, .25 cup
    Banana, fresh, 1 cup, mashed

Directions

Cream Icing ingredients together...set aside.

Spray 13x9 pan with Pam.

Cream together shortening and sugar. Beat in eggs.

Sift together Flour, baking powder and baking soda. Add to shortening mixture.

Combine lemon juice and milk. Stir in to batter. Add Bananas.

Bake @ 350` for 35-45 minutes
